Description

This 30 Minute Chicken Soup recipe is a comforting, quick meal featuring tender shredded chicken, egg noodles, carrots, celery, onions, garlic, and fragrant thyme, all simmered in a flavorful chicken broth and garnished with fresh parsley.


Ingredients

2 tablespoons olive oil

1 medium onion, diced

2 carrots, sliced

2 celery stalks, sliced

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

6 cups chicken broth

2 cups cooked shredded chicken

1 cup egg noodles

2 tablespoons fresh parsley, chopped


Instructions

Heat the olive oil in a large pot over medium heat.

Add the onion, carrots, and celery and sauté for 5 minutes until softened.

Stir in the garlic, salt, pepper, and thyme and cook for 1 minute.

Pour in the chicken broth and bring to a boil.

Add the shredded chicken and egg noodles.

Reduce heat and simmer for 10–12 minutes until noodles are tender.

Taste and adjust seasoning if needed.

Remove from heat and garnish with fresh parsley before serving.
