Description

Baked Barbecue Chicken Thighs with Onions is an easy oven-baked dinner featuring juicy bone-in chicken thighs coated in barbecue sauce, baked over tender sliced onions with olive oil, garlic powder, smoked paprika, salt, and black pepper for rich, smoky flavor.

Ingredients

6 bone-in, skin-on chicken thighs

1 cup barbecue sauce

2 large onions, sliced

2 tablespoons olive oil

1 teaspoon salt

1 teaspoon black pepper

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

Instructions

Preheat the oven to 200°C.

Place sliced onions in a baking dish and drizzle with olive oil.

Season the onions lightly with salt and pepper.

Arrange the chicken thighs over the onions.

Season the chicken with salt, black pepper, smoked paprika, and garlic powder.

Brush the chicken generously with barbecue sauce.

Cover the dish with foil.

Bake for 30 minutes.

Remove the foil and brush with more barbecue sauce.

Return to the oven and bake uncovered for 20–25 minutes.

Serve hot with the saucy onions.
