Ingredients
1 block (7 oz / 200g) feta cheese
2 cups cherry tomatoes, halved
2–3 large eggs
2 tablespoons olive oil
2 cloves garlic, minced
1 cup fresh spinach (optional)
1 teaspoon dried oregano (or fresh herbs like basil/parsley)
Pinch of red pepper flakes (optional, for spice)
Salt and black pepper to taste
Crusty bread or pita for serving
Instructions
Prepare the Base: Preheat oven to 375°F (190°C). Place the block of feta in the center of a small baking dish. Surround it with halved cherry tomatoes and garlic. Drizzle with olive oil and season with oregano, salt, and pepper.
Bake the Feta: Bake for 20 minutes until the tomatoes are softened and the feta starts to brown around the edges.
Add the Eggs: Remove the dish from the oven. Gently crack eggs on top of the feta and tomatoes. Return to oven and bake for 7–10 minutes, until egg whites are set but yolks remain runny.
Optional Spinach: Add fresh spinach in the last 5 minutes of baking for extra flavor and nutrition.
Serve: Garnish with fresh herbs and red pepper flakes. Serve hot with toasted bread or pita for dipping.
