Cheesy Queso Taco Pasta is a rich, creamy comfort dish made with tender penne pasta, seasoned ground beef, sautéed onions and peppers, queso cheese dip, and diced tomatoes with green chilies for a bold, flavorful finish.
Ingredients
16 oz penne pasta
2 tablespoons olive oil
1 lb ground beef
½ yellow onion, diced
2 bell peppers, diced (any color)
1 packet taco seasoning (about 1 oz)
16 oz queso cheese dip (store-bought, like Gordo’s or Tostitos)
1 (10 oz) can diced tomatoes with green chilies (such as Rotel)
(optional ingredient) shredded cheddar cheese, Mexican cheese blend, or homemade queso for topping
Instructions
Step 1: Cook the Pasta Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain well and set aside.
Step 2: Sauté the Veggies While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the diced onion and bell peppers. Sauté for about 3–4 minutes, stirring occasionally, until the vegetables start to soften and the onions become translucent.
Step 3: Brown the Beef Add the ground beef to the skillet with the vegetables. Break it up with a spatula and cook until browned and no longer pink, about 5–7 minutes. Drain off any excess fat.
Step 4: Add the Seasoning Sprinkle in the taco seasoning and stir well to coat the beef and vegetables. Cook for 1–2 minutes, allowing the spices to become fragrant.
Step 5: Combine Everything Reduce the heat to low. Add the drained pasta to the skillet. Pour in the queso cheese dip and the can of diced tomatoes with green chilies (do not drain). Stir everything together gently but thoroughly. Heat through for 1–2 minutes, then remove from the heat. If desired, top with optional shredded cheese or a sprinkle of your preferred cheese blend before serving.
