Cheesy Rotini Hamburger Casserole Recipe is a hearty baked comfort meal made with ground beef, rotini pasta, diced tomatoes, cream of mushroom soup, and a rich blend of cheddar and mozzarella cheese, seasoned with garlic and Italian herbs for a flavorful family dinner.


Ingredients

1 lb ground beef

1 medium onion, chopped

2 cups cooked rotini pasta

Sauce Base

1 can (15 oz) diced tomatoes, undrained

1 can (10.5 oz) cream of mushroom soup

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Seasonings

1 tsp garlic powder

1 tsp Italian seasoning

Salt and black pepper, to taste

Garnish

1-2 tbsp chopped fresh parsley


Instructions

Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13-inch baking dish.

In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft, about 6 to 8 minutes. Drain the excess fat from the skillet.

Add the can of undrained diced tomatoes, cream of mushroom soup, garlic powder, Italian seasoning, salt, and pepper to the skillet with the beef. Stir everything together and let it simmer for 2 to 3 minutes.

Stir the cooked rotini pasta into the skillet until it is evenly coated with the sauce.

Pour the mixture into the prepared baking dish. Mix the shredded cheddar and mozzarella cheeses together. Sprinkle half of the cheese blend over the casserole and stir lightly to combine.

Spread the remaining cheese blend evenly on top of the casserole. Bake uncovered for 25 to 30 minutes, or until the casserole is bubbly and the top is golden.

Let the casserole rest for 5 minutes, then sprinkle with chopped fresh parsley before serving.
