Ingredients
1 1/2 lbs chicken thighs, sliced
2 tablespoons olive oil
1 tablespoon lemon juice
3 cloves garlic, minced
1 teaspoon cumin
1 teaspoon smoked paprika
1/2 teaspoon turmeric
1/2 teaspoon coriander
1/4 teaspoon cinnamon
1 teaspoon salt
1/2 teaspoon black pepper
1 red onion, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
Pita or rice, for serving
Yogurt sauce, optional
Instructions
Preheat oven to 425°F (220°C).
In a bowl, combine olive oil, lemon juice, garlic, and all spices.
Add sliced chicken thighs and toss to coat.
Spread chicken, onions, and peppers on a sheet pan.
Bake for 20–25 minutes, until chicken is cooked and veggies are tender.
Broil for 2–3 minutes for charred edges.
