Ingredients
For the Noodles:
- 8 ounces egg noodles or rice noodles – Choose your favorite type; both work beautifully in this recipe.
- 1 pound boneless, skinless chicken breasts, sliced – Slice the chicken thinly for quick, even cooking.
- 2 tablespoons vegetable oil – For stir-frying the chicken and vegetables.
- 1 cup bell peppers, sliced – Use a mix of red, yellow, or green for a colorful presentation.
- 1 cup broccoli florets – Adds crunch and nutrition.
- 1 carrot, julienned – For sweetness and color.
- 3 green onions, sliced – For garnish and a mild onion flavor.
- 1/4 cup sesame seeds (optional) – Toasted sesame seeds add a nutty crunch.
For the Teriyaki Sauce:
- 1/2 cup soy sauce (or tamari for gluten-free) – The base of the sauce.
- 1/4 cup honey or maple syrup – For natural sweetness.
- 2 tablespoons rice vinegar – Adds tang and balances the flavors.
- 2 teaspoons cornstarch mixed with 2 tablespoons water – To thicken the sauce.
- 1 teaspoon garlic, minced – For aromatic depth.
- 1 teaspoon ginger, minced – Adds warmth and zing.
Instructions
Begin by cooking the noodles according to the package instructions. Once cooked, drain them well and set aside. This step can be done ahead of time to save even more time during busy evenings.
In a small bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, minced garlic, minced ginger, and the cornstarch-water mixture. Set the sauce aside; it will come together quickly once added to the pan.
Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for about 5-7 minutes, stirring occasionally, until the chicken is fully cooked and golden brown. Remove the chicken from the pan and set aside if you need more space for the vegetables.
To the same skillet, add the sliced bell peppers, broccoli florets, and julienned carrots. Stir-fry for about 3-4 minutes, or until the vegetables are just tender but still crisp. This keeps their color and nutrients intact.
Return the cooked chicken to the skillet, then add the drained noodles. Pour the prepared teriyaki sauce over everything. Toss well to combine, ensuring the sauce evenly coats the noodles, chicken, and vegetables. Cook for an additional 2-3 minutes, allowing the sauce to thicken and the flavors to meld.
Remove the skillet from the heat. Garnish your Chicken Teriyaki Noodles with sliced green onions and a sprinkle of sesame seeds if desired. Serve immediately for the best flavor and texture.
