Chili Cheese Potato Skillet is a hearty, comforting skillet meal made with crispy potatoes, seasoned ground beef, onions, chili beans, diced tomatoes with green chiles, garlic, and melted cheddar cheese, finished with fresh toppings for extra flavor.
Ingredients
For the Potatoes:
• 5 small/medium potatoes
• Olive oil
• Salt, pepper, garlic powder, paprika (to season potatoes)
For the Chili Mixture:
• 1 lb ground beef
• 1 onion, chopped
• 1/2 tsp each salt and pepper
• 1 tsp each onion powder and paprika
• 2 tsp chili powder
• 1 tbsp minced garlic
• 10 oz can diced tomatoes with green chiles, drained
• 15.5 oz can chili beans, drained
Toppings:
• 1 1/2 cups shredded cheddar cheese
• 2 green onions, chopped
• Sour cream
• Jalapeños
Instructions
1. Prepare the Potatoes
Peel, rinse, and cube the potatoes. Toss them with olive oil, salt, pepper, garlic powder, and paprika.
2. Air-Fry the Potatoes
Cook the seasoned potato cubes in an air fryer at 400°F for about 25 minutes, shaking the basket several times for even crisping.
3. Cook the Beef
In a large skillet over medium-high heat, brown the ground beef with the chopped onion. Season with salt, pepper, onion powder, paprika, and chili powder (or use a chili seasoning packet). Drain excess grease.
4. Add Remaining Chili Ingredients
Stir in minced garlic, the drained diced tomatoes with green chiles, and drained chili beans. Let simmer a few minutes while potatoes finish cooking.
5. Combine & Add Cheese
Add the crispy potatoes to the skillet and mix everything together. Top with shredded cheddar cheese. Place the skillet in the oven at 400°F for a few minutes until the cheese melts.
6. Top & Serve
Add chopped green onions and serve with sour cream and jalapeños.
