Chinese Winter Melon Soup with Meatballs is a comforting, savory soup made with tender winter melon cubes, juicy pork meatballs seasoned with garlic, ginger, soy sauce, and sesame oil, all simmered gently in a clear chicken broth for a light yet satisfying dish.
Ingredients
500 g winter melon, peeled and cubed
250 g ground pork
1 tablespoon soy sauce
1 teaspoon sesame oil
1 teaspoon cornstarch
1 egg white
2 cloves garlic, minced
1 teaspoon grated ginger
6 cups chicken broth
1/2 teaspoon white pepper
Salt, to taste
2 green onions, sliced
Fresh cilantro, for garnish
Instructions
In a bowl, combine ground pork, soy sauce, sesame oil, cornstarch, egg white, garlic, and ginger.
Mix well and form the mixture into small meatballs.
Bring the chicken broth to a gentle boil in a pot.
Add the winter melon cubes and simmer for 5 minutes.
Carefully add the meatballs to the pot.
Simmer for 10–12 minutes until meatballs are fully cooked and winter melon is tender.
Season with salt and white pepper to taste.
Remove from heat and garnish with green onions and cilantro before serving.
