Description

Christmas Cranberry Loaf Recipe made with fresh cranberries, orange zest, warm cinnamon, nutmeg, and a soft buttery batter. This festive loaf blends tart fruit, citrus brightness, and cozy holiday spices for the perfect seasonal treat.


Ingredients

2 cups all-purpose flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

1/4 tsp nutmeg

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 tsp vanilla extract

1/2 cup orange juice

1 tbsp orange zest

1 1/2 cups fresh or frozen cranberries

1/2 cup chopped walnuts (optional)


Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.

In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In a separate large bowl, cream the butter and sugar until light and fluffy.

Beat in the eggs one at a time, then add vanilla, orange juice, and orange zest.

Gradually stir the dry ingredients into the wet mixture until just combined.

Fold in cranberries and walnuts (if using).

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 50–60 minutes, or until a toothpick inserted comes out clean.

Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
