Ingredients
8 oz penne pasta
1 lb lean ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 can (15 oz) diced tomatoes (with juices)
1 cup low-sodium beef broth
1/2 cup plain Greek yogurt
1/4 cup grated Parmesan cheese
1 tbsp Italian seasoning
Salt and pepper to taste
Fresh basil or parsley for garnish
Olive oil (for cooking)
Instructions
Cook pasta according to package directions. Drain and set aside.
Heat olive oil in large skillet over medium heat. Add onion and cook until translucent (3-4 minutes).
Add ground beef, breaking apart with spoon. Cook until browned (5-6 minutes). Drain excess fat.
Stir in garlic, Italian seasoning, salt, and pepper. Cook 1 minute until fragrant.
Add diced tomatoes with juices and beef broth. Simmer for 10 minutes.
Remove from heat. Stir in Greek yogurt and Parmesan until creamy.
Add cooked pasta to skillet, tossing to coat. Garnish with fresh herbs.
