Ingredients
1.5 lbs boneless, skinless chicken breasts
1 onion, chopped
2 carrots, peeled and chopped
2 celery stalks, chopped
4 cloves garlic, minced
6 cups chicken broth
1 tsp dried thyme
1/2 tsp dried rosemary
1/4 tsp red pepper flakes (optional)
1 lb potato gnocchi
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
2 tbsp olive oil
Instructions
In a large skillet, heat olive oil over medium heat. Sear chicken breasts for 2-3 minutes per side.
Place chopped onion, carrots, and celery in the crockpot. Add minced garlic.
Place seared chicken breasts on top of the vegetables in the crockpot.
Pour chicken broth over the chicken and vegetables.
Add dried thyme, dried rosemary, and red pepper flakes (if using).
Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and shreds easily.
Remove chicken from the crockpot and shred with two forks. Return shredded chicken to the crockpot.
Stir in potato gnocchi. Cover and cook on high for 30 minutes, or until gnocchi is tender.
Stir in heavy cream and Parmesan cheese. Season with salt and pepper to taste.
