This creamy crockpot white chicken chili recipe features tender shredded chicken, cannellini beans, diced green chilies, onions, and a blend of spices, finished with rich cream cheese for a smooth, comforting, and flavorful slow-cooked meal.


Ingredients

2 pounds boneless, skinless chicken breasts

1 large onion, chopped

2 (15 ounce) cans cannellini beans, rinsed and drained

1 (4 ounce) can diced green chilies

1 tablespoon chili powder

2 teaspoons cumin

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional)

4 cups chicken broth

8 ounces cream cheese, softened

1/4 cup chopped fresh cilantro (for garnish)

Shredded cheese (for garnish)

Sour cream (for garnish)


Instructions

Place chicken breasts in the bottom of your crockpot.

Top the chicken with chopped onion, cannellini beans, and diced green chilies.

In a small bowl, mix together chili powder, cumin, oregano, salt, pepper, and cayenne pepper (if using). Sprinkle this mixture over the ingredients in the crockpot.

Pour in the chicken broth.

Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.

Remove the chicken from the crockpot and shred it with two forks. Return the shredded chicken to the crockpot.

Stir in the softened cream cheese until it is fully melted and the chili is creamy.

Serve hot, garnished with fresh cilantro, shredded cheese, and a dollop of sour cream.
