Ingredients
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
4 cups beef broth
2 cups diced potatoes (about 2 medium)
1 cup shredded carrots (about 2 medium)
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
1 cup milk
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
Optional toppings: cooked bacon bits, chopped chives, sour cream
Instructions
Brown the ground beef in a skillet over medium-high heat. Drain off excess fat.
Add the browned ground beef, chopped onion, and minced garlic to your slow cooker.
Stir in the beef broth, diced potatoes, shredded carrots, salt, pepper, and paprika.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
Stir in the milk and cook for another 15-20 minutes, or until heated through. Do not boil.
Remove from heat and stir in the cheddar cheese and Monterey Jack cheese until melted and smooth.
Serve hot, garnished with your favorite toppings.
