Description

Crock Pot Lasagna Soup is a comforting, hearty dish made with ground beef, broken lasagna noodles, ricotta, mozzarella, Parmesan, and a rich tomato and beef broth. Easy to prepare, cheesy, and full of classic lasagna flavor in every spoonful.


Ingredients

1 lb ground beef

1 small onion, chopped

3 cloves garlic, minced

1 (28 oz) can crushed tomatoes

1 (15 oz) can tomato sauce

4 cups beef broth

2 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

8 lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Fresh basil or parsley for garnish (optional)


Instructions

In a skillet over medium heat, cook ground beef with chopped onion until browned. Drain excess fat.

Add minced garlic and cook for 1 minute.

Transfer beef mixture to the crock pot.

Add crushed tomatoes, tomato sauce, beef broth, Italian seasoning, red pepper flakes, salt, and pepper.

Stir to combine, cover, and cook on low for 6–7 hours or high for 3–4 hours.

About 30 minutes before serving, stir in broken lasagna noodles.

Continue cooking until noodles are tender.

In a small bowl, mix ricotta, mozzarella, and Parmesan cheese.

Ladle soup into bowls and top with a scoop of cheese mixture.

Garnish with fresh herbs and serve hot.
