Description

Crock Pot Spicy Vegetable Beef Soup Recipe is a hearty slow-cooker dish made with ground chuck, russet potatoes, mixed vegetables, pasta sauce, diced tomatoes, Rotel, and savory seasonings, creating a rich, comforting soup with a mild spicy kick.


Ingredients

1 lb ground chuck

• 1 medium onion, diced

• 2 russet potatoes, peeled and cut into chunks

• 1 package frozen mixed vegetables

• 1 (24 oz) jar pasta sauce

• 1 (14.5 oz) can diced tomatoes, undrained

• 1 (10 oz) can Rotel tomatoes, undrained

• 1 can beef broth

• 1 cup water

• 2 tbsp ketchup

• 2 tsp Worcestershire sauce (or substitute soy sauce plus a splash of balsamic vinegar)

• 1 tsp Italian seasoning

• ½ tsp crushed red pepper flakes

• ½ tsp salt

• ½ tsp black pepper


Instructions

In a large skillet over medium heat, cook the ground chuck and diced onion until the beef is browned and no longer pink. Drain off any excess grease. Transfer the mixture to a 6-quart slow cooker.

Add the potatoes, frozen vegetables, pasta sauce, diced tomatoes, Rotel, beef broth, water, ketchup, Worcestershire sauce, and all seasonings (Italian seasoning, red pepper flakes, salt, black pepper) to the slow cooker. Stir well to combine.

Cover and cook on LOW for 6 to 8 hours or on HIGH for 5 to 6 hours, until the potatoes are tender and the flavors have melded together.

Ladle the hot soup into bowls and serve. It is delicious with warm cornbread or crusty bread on the side.
