Ingredients

1 lb beef stew meat, cubed

3 carrots, sliced

3 potatoes, peeled and diced

2 celery stalks, chopped

1 onion, chopped

3 garlic cloves, minced

1 can (14.5 oz) diced tomatoes, undrained

1 cup green beans (fresh or frozen)

1 cup corn kernels (fresh, frozen, or canned)

6 cups beef broth

1 tsp dried basil

1 tsp dried oregano

1 bay leaf

Salt and pepper to taste


Instructions

Place beef, carrots, potatoes, celery, onion, and garlic into the Crock Pot.

Add diced tomatoes, green beans, corn, and beef broth.

Stir in basil, oregano, bay leaf, salt, and pepper.

Cover and cook on low for 8–10 hours or high for 4–5 hours, until beef is tender and vegetables are cooked through.

Remove bay leaf before serving.
