Description

Crockpot Chicken Pot Pie Pasta is a rich, creamy comfort dish made with tender chicken, pasta, mixed vegetables, cream of chicken soup, chicken broth, and flavorful seasonings, slow cooked to create a hearty, satisfying, and easy family meal.

Ingredients

2 lbs boneless, skinless chicken breasts

Salt, pepper, garlic powder, and onion powder (to taste)

Kinder’s Buttery Garlic & Herb seasoning (to taste)

2 cans cream of chicken soup

2 cups chicken broth

1 bag frozen mixed vegetables

1 cup heavy cream

2 cups shredded mozzarella cheese (optional)

½ cup sour cream

12 oz cooked pasta (penne or rotini)

Instructions

Place the chicken breasts in the crockpot and season generously with salt, pepper, garlic powder, and onion powder.

Pour the frozen mixed vegetables over the chicken and sprinkle with Kinder’s seasoning.

Add the chicken broth and both cans of cream of chicken soup.

Cover and cook on HIGH for 3 hours or LOW for 6–7 hours, until the chicken becomes tender.

Shred the chicken directly in the crockpot and stir to combine.

Add the cooked pasta and fold it into the mixture.

Stir in the heavy cream, mozzarella if using, and sour cream until fully incorporated.

Let the casserole sit for 10–15 minutes so it thickens and becomes extra creamy before serving.
