How to Crockpot Cowboy Casserole Recipe Step-by-Step

Here’s how I made this dish, step by step:

-Lightly spray the crockpot with nonstick cooking spray to ensure easy cleanup and prevent sticking.

-In a 10-inch nonstick skillet over medium-high heat, brown the ground beef along with the diced onions and minced garlic until the beef is no longer pink and the onions are soft. The kitchen fills with a rich, savory aroma during this step.

-Drain any excess oil from the beef mixture and transfer it to the prepared crockpot.

-Add the undrained kidney beans, petite diced tomatoes, diced tomatoes with fire-roasted hatch chilies, frozen corn, kosher salt, black pepper, and chipotle powder. Stir gently to combine all the ingredients. At this point, the mixture looks colorful and smells amazing.

-Remove 1½ cups of the meat mixture to sprinkle over the sliced potatoes later. This will help the top layer get a nice even coating of meat and flavor.

-Layer the Yukon gold potato slices into the crockpot, creating a rustic, layered effect. Then sprinkle the reserved meat mixture over the potatoes to ensure every slice gets some of that rich, flavorful beef mixture.

-Place the lid onto the crockpot and cook on high for 5 hours or low for 7 hours. The long cooking time allows the flavors to meld and the potatoes to become tender and infused with savory juices.

-Just before serving, remove the lid and evenly sprinkle the shredded Colby and Monterey Jack cheese on top. Place the lid back on until the cheese melts completely. Serve immediately while hot, enjoying the gooey, cheesy topping with every bite.
