Ingredients

For the Caramelized Onions:

• 3-4 large sweet onions (Vidalia or yellow), sliced

• 4 tablespoons salted butter

For the Meatloaf:

• 1 pound ground beef (lean or regular)

• 1 cup breadcrumbs • 1 teaspoon salt

• ½ teaspoon black pepper

• ½ teaspoon garlic powder

• ½ teaspoon onion powder

Additional:

• 1 cup shredded Swiss cheese

• ½ cup beef broth or French onion soup

• Fresh parsley, chopped (for garnish)


Instructions

Caramelize the Onions: In a large skillet over medium-high heat, melt the butter. Add the sliced onions and a pinch of salt. Cook for 20-25 minutes, stirring often, until the onions are deeply golden-brown and caramelized. Some crispy edges are great for flavor. Remove from heat and set aside.

Prepare the Meatloaf Mixture: In a large bowl, mix the ground beef, breadcrumbs, salt, black pepper, garlic powder, and onion powder. Gently combine using your hands or a fork. Avoid overmixing to keep the meatloaf tender.

Assemble in the Crockpot: Lightly grease the crockpot with oil or cooking spray. Spread half of the caramelized onions across the bottom. Shape the meat mixture into a loaf and place it on top of the onions. Pour ½ cup of beef broth or French onion soup around the edges for extra moisture. Cover the meatloaf with the remaining caramelized onions.

Top with Cheese: Generously sprinkle the shredded Swiss cheese over the top to fully cover the meatloaf.

Slow Cook to Perfection: Cover and cook on low for 6-8 hours or on high for 3-4 hours until the meatloaf is fully cooked. The internal temperature should reach 165°F (74°C). The broth or soup will create a flavorful sauce around the edges.

Rest & Serve: Carefully transfer the meatloaf to a cutting board or plate. Let it rest for 5-10 minutes before slicing. Spoon some of the flavorful onion sauce from the crockpot over the top. Garnish with fresh chopped parsley. Serve warm with mashed potatoes, roasted vegetables, or crusty bread.
