Description
Crockpot Loaded Queso Beef And Rice is a rich, creamy slow cooker dish made with ground beef, white rice, Rotel tomatoes, beef broth, Velveeta, cream cheese, cheddar, and taco seasoning for a bold, comforting, cheesy meal.
Ingredients
• 2 lbs ground beef
• 1½ cups uncooked white rice
• 2 cups beef broth
• 1 cup heavy cream
• 1 (10 oz) can Rotel (diced tomatoes with green chilies)
• 1 packet taco seasoning
• 1 tbsp garlic powder
• ½ cup cream cheese, cubed
• 8 oz Velveeta cheese, cubed
• 1 cup shredded cheddar cheese (divided)
• Salt & black pepper, to taste
Instructions
1. Cook the beef
In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease.
2. Transfer to crockpot
Add the cooked beef to the slow cooker.
3. Add base ingredients
Stir in the uncooked rice, beef broth, heavy cream, Rotel, taco seasoning, garlic powder, salt, and pepper.
4. Add cheeses
Place the cubed Velveeta and cream cheese on top of the mixture.
5. Slow cook
Cover and cook on High for 2–3 hours or Low for 4–5 hours, until the rice is tender.
6. Stir until creamy
Mix everything together until smooth and fully combined.
7. Finish with cheddar
Stir in half of the shredded cheddar cheese, then sprinkle the remaining cheese over the top.
8. Melt and serve
Cover and let sit for 10–15 minutes until the cheese is melted. Serve warm.
