Ingredients
1 pound chicken breasts or thighs
12 ounces chicken sausage, cut into 1-inch pieces
1 cup low-sodium chicken broth
1 bell pepper, diced
1 celery stalk, sliced
1/2 cup onion, diced
1 garlic cloves, minced
15 ounces diced tomatoes with juices
1 tablespoon paprika
1 1/2 teaspoon salt (or more)
1 1/2 teaspoons thyme
1 1/2 teaspoons red pepper flakes
1 jalapeno, sliced (optional for garnish)
Instructions
Place chicken pieces in the bottom of your crockpot.
Add sausage, bell pepper, celery, onion, and garlic on top of the chicken.
In a small bowl, mix together chicken broth, diced tomatoes, paprika, salt, thyme, and red pepper flakes.
Pour the liquid mixture over the ingredients in the crockpot.
Cover and cook on low for 6-7 hours or high for 3-4 hours.
When done, shred the chicken with two forks directly in the pot.
Stir everything together and let it sit for 10 minutes to absorb flavors.
Garnish with sliced jalapenos if desired before serving.
