Description
Crockpot Taco Casserole Recipe is a cheesy slow-cooker meal with ground beef, frozen potatoes, taco seasoning, cream of chicken soup, salsa, and layers of melted cheddar and pepper jack cheese.
Ingredients
1.5 lbs ground beef
• 1 small onion, diced
• 1 tablespoon minced garlic
• 2 packets taco seasoning, divided
• 1/3 cup water
• 32 oz frozen diced potatoes
• 1 can cream of chicken soup (or any cream-style soup you prefer)
• 1 cup salsa
• 2 cups shredded cheese (sharp cheddar and pepper jack recommended)
• 2 additional cups shredded cheese, for topping
Instructions
Cook the Beef Base
In a large skillet, sauté the ground beef with the diced onion and minced garlic until the meat is fully browned. Drain any excess grease. Add 1 packet of taco seasoning plus 1/3 cup water, stir well, and let it simmer briefly to coat the meat.
Build the Casserole in the Crockpot
Pour the cooked beef mixture into your slow cooker. Add the frozen potatoes, the second packet of taco seasoning, cream soup, salsa, and 2 cups of shredded cheese. Stir everything together until well combined.
Add the Cheese Layer
Sprinkle the remaining 2 cups of cheese evenly over the top of the mixture.
Slow Cook
Cook on LOW for 3 to 4 hours or on HIGH for 2 to 3 hours. The casserole is ready when the potatoes are tender all the way through. Exact cooking time may vary by slow-cooker model.
Serve
Spoon the casserole into bowls. Top with your favorite garnishes such as sour cream, green onions, jalapeños, cilantro, or tortilla chips.
