Ingredients
1 large head of cauliflower, chopped
4 cups vegetable broth
1 medium onion, chopped
2 cloves garlic, minced
1/4 cup heavy cream
2 tablespoons olive oil
Salt and pepper to taste

Instructions
Heat olive oil in a large pot over medium heat.
Add onion and garlic, cook until softened.
Add cauliflower and vegetable broth. Bring to a boil, then reduce heat and simmer until cauliflower is tender.

Stir in heavy cream, salt, and pepper.
