Ingredients
1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1 red bell pepper, cut into 1-inch pieces
1 orange bell pepper, cut into 1-inch pieces
1 broccoli head, cut into florets
1 red onion, cut into wedges
2 carrots, peeled and sliced
1/4 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 teaspoon garlic powder
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C).
In a large bowl, combine sweet chili sauce, soy sauce, rice vinegar, sesame oil, garlic powder, and red pepper flakes (if using).
Add chicken and vegetables to the bowl and toss to coat evenly.
Spread chicken and vegetables in a single layer on a large sheet pan.
Season with salt and pepper to taste.
Bake for 20-25 minutes, or until chicken is cooked through and vegetables are tender.
Serve immediately.
