Description

Fajita Chicken Casserole Recipe is a creamy, cheesy baked dish made with shredded chicken, instant rice, fajita seasoning, peppers, tomatoes one pan!


Ingredients

4 cups cooked, shredded chicken (about 3 large breasts)

2 cups instant rice (uncooked)

1 (10.5 ounce) can cream of chicken soup

1 cup sour cream

1 cup frozen diced onion and bell pepper mix

1 (10 ounce) can diced tomatoes with green chilies, with juices

1 1/2 cups chicken broth

1 (1.12 ounce) packet fajita seasoning

2 cups (8 ounce bag) shredded Mexican blend cheese


Instructions

Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13-inch baking dish.

In a large bowl, combine the shredded chicken, uncooked instant rice, cream of chicken soup, sour cream, frozen pepper and onion mix, diced tomatoes with their liquid, chicken broth, fajita seasoning, and one cup of the shredded cheese. Stir until everything is well combined.

Spread the mixture evenly into the prepared baking dish.

Cover the dish tightly with aluminum foil and bake for 35 minutes.

Carefully remove the foil and sprinkle the remaining one cup of cheese over the top. Return the dish to the oven, uncovered, and bake for another 10 minutes, or until the cheese is melted and bubbly.

Let the casserole rest for 5 to 10 minutes before serving. It can be served with tortilla chips, sliced avocado, or a simple green salad.
