Ingredients

2 lbs boneless, skinless chicken breasts or thighs

1.5 lbs baby red potatoes, quartered

1 lb whole carrots, peeled and cut into chunks

6 cloves garlic, minced

1/2 cup (1 stick) unsalted butter, melted

1 tbsp Italian seasoning

1 tsp salt

1/2 tsp black pepper

1 tbsp chopped parsley (optional, for garnish)

1/2 cup chicken broth


Instructions

Prep the Ingredients: Toss chicken, potatoes, and carrots into the slow cooker.
