Ingredients

For the Chicken:

• 1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces

• 2 tablespoons olive oil

• Salt and black pepper, to taste

• ½ teaspoon garlic powder

• 5 cloves garlic, minced

• ¼ cup honey

• 2 tablespoons soy sauce

• 1 tablespoon apple cider vinegar

• 1 tablespoon butter

For the Creamy Rice:

• 1½ cups jasmine or white rice

• 3 cups chicken broth

• 1 cup heavy cream

• 1 cup shredded mozzarella cheese

• ½ cup cream cheese, softened

• ½ cup grated Parmesan cheese

• 1 tablespoon butter

• 1 teaspoon Italian seasoning

• Salt and pepper, to taste

• Fresh parsley, for garnish


Instructions

Cook the Creamy Rice: In a large pot, combine the rice and chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed. Stir in the butter, heavy cream, cream cheese, mozzarella, and Parmesan cheese. Mix until all the cheese has melted and the rice is creamy. Season with Italian seasoning, salt, and pepper to taste. Cover and keep warm while you prepare the chicken.

Prepare the Chicken: While the rice cooks, heat the olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt, pepper, and garlic powder. Add the chicken to the hot skillet and cook for 12-15 minutes, stirring occasionally, until golden brown and cooked through.

Make the Honey Garlic Sauce: Push the cooked chicken to the edges of the skillet. Add the butter and minced garlic to the center and sauté for about 30 seconds, until fragrant. Pour in the honey, soy sauce, and apple cider vinegar. Stir everything together to coat the chicken evenly. Let the sauce simmer with the chicken for 2-3 minutes, until it thickens slightly and glazes the chicken.

Assemble and Serve: Spoon the creamy Parmesan rice onto plates or into bowls. Top with the honey garlic chicken bites and drizzle with any extra sauce from the pan. Garnish with fresh parsley before serving.
