Ingredients
6 bone-in, skinless chicken thighs
1 tablespoon olive oil
3 cloves garlic, minced
1/3 cup balsamic vinegar
1/2 cup chicken broth
2 tablespoons honey
1 tablespoon soy sauce
1 teaspoon dried thyme
Salt and black pepper to taste
Fresh basil or parsley, chopped
Instructions
Season the chicken thighs with salt and black pepper.
Set the Instant Pot to sauté mode and add olive oil.
Sear the chicken thighs briefly, then remove and set aside.
Add garlic to the pot and sauté until fragrant.
Pour in balsamic vinegar and chicken broth, scraping the bottom.
Stir in honey, soy sauce, and dried thyme.
Return the chicken thighs to the Instant Pot.
Close the lid and set to pressure cook on high.
Cook for 10 minutes, then allow a natural release.
Open the lid and spoon the sauce over the chicken.
Garnish with fresh herbs before serving.
