Description

The Maple Dijon Chicken Bowl recipe combines juicy boneless chicken thighs with roasted sweet potatoes, all coated in a sweet and tangy maple Dijon glaze. Simple, flavorful, and perfect for a wholesome weeknight dinner or meal prep.


Ingredients

1.5 lbs boneless, skinless chicken thighs

1.5 lbs sweet potatoes, cubed

1/4 cup olive oil

1/4 cup Dijon mustard

2 tbsp maple syrup

2 tbsp apple cider vinegar

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste


Instructions

Preheat oven to 400°F (200°C).

Toss sweet potatoes with 2 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.

While sweet potatoes roast, whisk together the remaining 2 tbsp olive oil, Dijon mustard, maple syrup, apple cider vinegar, garlic powder, onion powder, salt, and pepper in a bowl.

Add chicken thighs to the bowl and toss to coat evenly.

Add chicken to the baking sheet with the sweet potatoes (or use a separate one).

Bake for another 20-25 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Serve chicken and sweet potatoes in bowls.
