Ingredients
1 lb (450g) ground beef
1 small onion, diced
2 cloves garlic, minced
1 bell pepper, chopped
1 can (10 oz) diced tomatoes with green chilies
1/2 cup sour cream
1 tsp chili powder
1/2 tsp cumin
Salt and pepper to taste
1 1/2 cups shredded cheddar cheese
1 tbsp olive oil
Fresh cilantro for garnish (optional)
Instructions
Preheat oven to 180°C (350°F).
In a skillet, heat olive oil over medium heat. Add diced onion and garlic; sauté until fragrant.
Add ground beef and cook until browned. Drain excess fat if needed.
Stir in bell pepper, canned tomatoes, chili powder, cumin, salt, and pepper. Cook for 5 minutes.
Remove from heat and mix in sour cream.
Transfer mixture to a baking dish and top with shredded cheese.
Bake for 15-20 minutes or until cheese is melted and bubbly.
Garnish with chopped cilantro before serving, if desired.
