Ingredients
• 1½ lbs ground beef
• 1 cup beef broth
• 1 (10 oz) can Rotel (with juices)
• 8 oz cream cheese, cut into cubes
• 1 cup heavy cream
• 1 cup nacho cheese sauce
• 1½ cups shredded cheddar cheese
• 1 tsp taco seasoning (optional)
• 8 oz pasta shells, cooked and drained
Instructions
1. Cook the beef
In a skillet over medium heat, brown the ground beef until fully cooked. Drain off any excess grease.
2. Combine in slow cooker
Transfer the cooked beef to the crockpot. Add beef broth, Rotel, cream cheese, heavy cream, nacho cheese sauce, and taco seasoning.
3. Melt and blend
Cook on High for 1 to 1½ hours, stirring once or twice, until the cheeses are fully melted and the mixture is smooth.
4. Add cheddar
Stir in the shredded cheddar cheese until melted and incorporated.
5. Mix with pasta
Add the cooked pasta shells and toss until everything is evenly coated in the creamy sauce.
6. Rest before serving
Let the dish sit for 5–10 minutes to thicken slightly before serving.
