Description

Delicious One Bowl Apple Cinnamon Muffins made with fresh chopped apples, warm cinnamon, sugar, eggs, milk, and a touch of vanilla. Soft, moist, and easy to bake, these muffins are perfect for breakfast, snacks, or cozy moments any time of day.

Ingredients

2 cups all-purpose flour

1/2 cup sugar (or coconut sugar for a healthier option)

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/4 teaspoon salt

2 large eggs

1/2 cup vegetable oil or melted butter

1/2 cup milk (dairy or plant-based)

2 cups chopped apples (such as Granny Smith or Honeycrisp)

1 teaspoon vanilla extract

Instructions

Preheat and Prepare: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.

Mix Wet Ingredients: In one large bowl, whisk together eggs, sugar, oil, milk, and vanilla until smooth.

Add Dry Ingredients: Add flour, baking powder, cinnamon, and salt directly into the bowl. Stir gently until just combined.

Fold in Apples: Gently fold in chopped apples, being careful not to overmix the batter.

Bake: Divide batter evenly into the muffin cups, filling each about 2/3 full. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Enjoy: Let muffins cool for 5 minutes in the pan before transferring to a wire rack. Serve warm or store for later.
