Ingredients

6 bone-in, skin-on chicken thighs

1 cup long-grain white rice

1 can black beans, drained and rinsed

2 cups chicken broth

1 small onion, diced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt to taste

Black pepper to taste

2 tablespoons olive oil

1/2 cup fresh cilantro, chopped

Juice of 1 lime


Instructions

Season chicken thighs with salt, pepper, cumin, and smoked paprika.

Heat olive oil in a large pot or deep skillet over medium heat.

Sear chicken thighs skin-side down until golden brown, then flip and cook briefly.

Remove chicken and set aside.

Add onion to the pot and cook until softened.

Stir in garlic and cook for 30 seconds.

Add rice and stir to coat with oil and aromatics.

Pour in chicken broth and bring to a simmer.

Stir in black beans.

Place chicken thighs on top of the rice mixture.

Cover and cook until rice is tender and chicken is fully cooked.

Remove from heat and stir in cilantro and lime juice before serving.
