Ingredients

1 tablespoon olive oil

1 pound ground beef or ground turkey

1 medium onion, chopped

3 bell peppers (any color), diced

3 cloves garlic, minced

1 cup uncooked long-grain white rice (or brown rice for more fiber)

1 can (14 oz) crushed tomatoes

2 tablespoons tomato paste

2 1/2 cups chicken broth (or vegetable broth for vegetarian)

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded cheese (cheddar or mozzarella)

Fresh parsley or basil for garnish (optional)


Instructions

Sauté Aromatics: Heat olive oil in a large skillet or Dutch oven over medium heat. Add onion and garlic and cook until softened, about 3 minutes.

Brown the Meat: Add ground beef or turkey. Cook until browned and crumbly, about 5–6 minutes. Drain excess grease if needed.

Add the Veggies: Stir in the bell peppers and cook for 2–3 minutes until slightly softened.
