Ingredients
1 lb boneless, skinless chicken breast, cut into 1-inch pieces
1 large sweet potato, peeled and diced
1 cup cooked brown rice
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C).
Toss chicken and sweet potato with olive oil, paprika, garlic powder, salt, and pepper on a baking sheet.
Roast for 20-25 minutes, or until chicken is cooked through and sweet potato is tender.
Serve chicken and sweet potato mixture over cooked brown rice.
