Ingredients
For the Chicken:
• 4 boneless, skinless chicken breasts
• 2 cups pretzels, crushed
• ½ cup all-purpose flour
• 2 large eggs • ¼ cup milk
• Salt and pepper, to taste
• 2 tablespoons vegetable oil
For the Mustard Cheddar Sauce:
• 2 tablespoons butter
• 2 tablespoons all-purpose flour
• 1 cup milk
• 1 cup sharp cheddar cheese, shredded
• 2 tablespoons Dijon mustard
• Salt and pepper, to taste
Instructions
Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment. Set up three bowls: one with crushed pretzels, one with flour, and one with eggs whisked with milk.
Season chicken with salt and pepper. Dredge each piece in flour, dip in egg mixture, then coat firmly with crushed pretzels.
Heat oil in a large skillet over medium-high heat. Sear breaded chicken for 3 to 4 minutes per side, until golden brown. Transfer to the prepared baking sheet and bake for 15 to 20 minutes, until internal temperature reaches 165 degrees Fahrenheit.
For the sauce, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 to 2 minutes until bubbly. Gradually whisk in milk and cook until thickened. Reduce heat, add cheddar cheese, and stir until melted. Mix in Dijon mustard and season with salt and pepper.
Let chicken rest a few minutes before serving. Serve hot, drizzled with the sauce.
