Description

Delicious Pumpkin Cookies are soft, chewy, and full of autumn flavor, made with pumpkin puree, butter, brown and granulated sugar, all-purpose flour, and warm pumpkin pie spice—perfect for cozy fall baking and sharing with family and friends.


Ingredients

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons pumpkin pie spice

1/2 cup (1 stick) unsalted butter, softened

1 cup granulated sugar

1/2 cup packed light brown sugar

1 large egg

1 teaspoon vanilla extract

1 cup pumpkin puree (not pumpkin pie filling)

Optional: 1 cup chopped pecans or walnuts

Optional: Powdered sugar for dusting


Instructions

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

In a medium bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice.

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg and vanilla extract until well combined.

Stir in the pumpkin puree until just incorporated.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

If using, stir in the chopped nuts.

Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft.

Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Optional: Dust with powdered sugar once cooled.
