Description
Rainbow Fried Rice is a vibrant, nutritious dish made with jasmine rice, eggs, optional chicken, and a colorful medley of vegetables like carrots, broccoli, tomatoes, corn, and cauliflower, all tossed in a savory blend of soy and oyster sauces.
Ingredients
1 cup jasmine rice
1 cup water (or amount indicated on your rice cooker)
1 tbsp onions or shallots, minced
1 tsp garlic, minced
2 tbsp carrots, diced
2 tbsp broccoli, chopped
2 tbsp cherry tomatoes, halved
2 tbsp sweet corn
2 tbsp cauliflower, chopped
100g boneless chicken breast or thighs, diced (optional)
1–2 eggs
2 stalks spring onions, for garnish
Seasoning Sauce:
1 tbsp light soy sauce
1/2 tbsp dark soy sauce
1/2 tbsp oyster sauce
1/2 tsp sesame oil
1/4 tsp ground white or black pepper
Instructions
Wash the Rice: Rinse jasmine rice thoroughly until the water runs clear. Add to the rice cooker pot and top up with 1 cup of water or per your rice cooker’s guide.
Stir in Aromatics: Add minced onions and garlic to the rice. Stir to mix evenly.
Add Veggies and Protein: Layer your chopped vegetables on top. Add chicken if using. Crack 1–2 eggs over the top—do not mix.
Cook: Close the lid and cook on the normal white rice setting. Let the rice cooker do the work.
Mix the Sauce: While cooking, mix light soy sauce, dark soy sauce, oyster sauce, sesame oil, and pepper in a small bowl.
Combine and Serve: Once rice is cooked, carefully open the lid (watch the steam!). Pour in the sauce, break up the egg with a rice paddle, and stir everything well. Garnish with spring onions and serve warm.
