Description
Rotel Chicken Pasta is a creamy, cheesy comfort dish made with seasoned chicken, Rotel tomatoes with green chilies, tender pasta, spinach, and a rich cheese sauce, baked until hot, bubbly, and full of bold flavor.
Ingredients
For the Chicken: • 1½ lbs boneless, skinless chicken breasts (or thighs), cut into bite-sized pieces • 1 tbsp garlic powder • 1 tbsp Creole seasoning • 1 tsp smoked paprika • 1 tsp Italian seasoning • 1 tsp crushed oregano • 2 tbsp oil
For the Pasta: • 12 oz rotini or your favorite short pasta • Salted water, for boiling
Veggies & Add-Ins: • 1 can Rotel (diced tomatoes with green chilies) • 1 to 1½ cups chopped fresh spinach • ½ cup mixed diced vegetables (e.g. onions, bell peppers)
Sauce & Cheese: • 1½ cups cheese sauce • 1½ cups shredded cheese (cheddar or Mexican blend) • ½ cup crushed Doritos (optional)
Instructions
In a bowl, add chicken pieces, oil, garlic powder, Creole seasoning, smoked paprika, Italian seasoning, and oregano. Mix thoroughly to coat all the pieces.
Bake the chicken in the oven at 400°F (200°C) for about 20 to 25 minutes or until fully cooked and slightly golden.
While the chicken bakes, boil pasta in salted water according to package instructions. Drain and set aside.
In a large skillet or pan, lightly sauté diced onions, bell peppers, or your preferred veggies in a little oil until softened. Add in chopped spinach and stir until wilted. Set aside.
In the same pan or a large mixing bowl, combine the cooked chicken, sautéed veggies, drained Rotel, and cheese sauce. Mix until evenly coated.
Add the cooked pasta to the chicken mixture and stir well. Transfer everything to a baking dish.
Sprinkle shredded cheese over the top. Optionally, sprinkle lightly crushed Doritos for crunch. Bake at 375°F (190°C) for 15 to 20 minutes until hot and bubbly.
Serve hot with garlic knots or rolls.
