Ingredients
• 1 lb turkey sausage, sliced into ¼-inch rounds (or any sausage you prefer)
• 1 large green bell pepper, sliced into strips
• 1 medium yellow bell pepper, sliced into strips (optional)
• 1 large yellow onion, sliced
• 1 cup cherry tomatoes, halved (or 1 medium tomato, diced)
• 2 tablespoons olive oil or butter
• 1 teaspoon garlic powder
• 1 teaspoon black pepper
• ½ teaspoon salt, or to taste
• 1 teaspoon Cajun seasoning (optional)
• 2 cups cooked white rice, for serving
Instructions
Prep the Ingredients. Slice sausage, bell peppers, and onion. Halve the cherry tomatoes.
Brown the Sausage. Heat olive oil or butter in a large skillet over medium heat. Add sausage slices in a single layer and cook for 4 to 5 minutes per side until browned. Remove sausage from the pan and set aside.
Sauté the Veggies. In the same skillet, add sliced onions and bell peppers. Sauté for 5 to 6 minutes until they begin to soften. Add cherry tomatoes and cook 2 to 3 minutes more, stirring occasionally, until tomatoes release their juices.
Season and Combine. Return the browned sausage to the skillet. Sprinkle in garlic powder, black pepper, salt, and Cajun seasoning if using. Stir to mix everything well.
Simmer to Blend Flavors. Cook the mixture for another 2 to 3 minutes so the flavors can meld and the tomatoes thicken the sauce slightly.
