Description

Sheet Pan BBQ Chicken Meatballs are a simple, flavorful meal made with ground chicken, BBQ sauce, breadcrumbs, onions, and roasted corn. Juicy, tender, and easy to prepare, this one-pan recipe is perfect for weeknights or casual dinners.


Ingredients

1 pound ground chicken

1/2 cup breadcrumbs

1/4 cup finely chopped onion

1 egg

2 tablespoons BBQ sauce, plus more for coating

1 teaspoon salt

1/2 teaspoon black pepper

2 cups corn kernels (fresh or frozen)

1 tablespoon olive oil

Optional: chopped parsley for garnish


Instructions

Preheat your oven to 400°F (200°C).

In a medium bowl, combine ground chicken, breadcrumbs, chopped onion, egg, 2 tablespoons of BBQ sauce, salt, and pepper. Mix gently until just combined.

Roll the mixture into 1-inch meatballs.

Place the meatballs on one side of a large baking sheet.

In a separate bowl, toss the corn kernels with olive oil. Spread the corn on the other side of the baking sheet.

Bake for 15 minutes.

Remove the baking sheet from the oven. Brush the meatballs with additional BBQ sauce.

Continue baking for another 10-15 minutes, or until the meatballs are cooked through and the corn is tender.

Serve hot, garnished with parsley if desired.
