Description

Sheet Pan Mediterranean Chicken Zucchini is a vibrant, one-pan dish that combines tender chicken, fresh zucchini, juicy cherry tomatoes, and red onion. Seasoned with garlic and Mediterranean herbs, it’s a flavorful, healthy meal that’s easy to prepare and perfect for busy nights.


Ingredients

2 boneless, skinless chicken breasts, cut into 1.5-inch pieces

2 medium zucchinis, sliced into ½-inch half-moons

1 cup cherry tomatoes, halved

½ red onion, thinly sliced

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

½ teaspoon dried basil

½ teaspoon smoked paprika

¼ teaspoon red pepper flakes (optional)

½ teaspoon salt

¼ teaspoon black pepper

½ cup shredded mozzarella or crumbled feta cheese

¼ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (optional garnish)


Instructions

Preheat the Oven: Preheat oven to 400°F (200°C) and line a large sheet pan with parchment paper or grease with olive oil.

Prepare the Ingredients: In a large bowl, combine chicken, zucchini, cherry tomatoes, red onion, garlic, olive oil, oregano, basil, paprika, salt, pepper, and red pepper flakes. Toss until evenly coated.

Assemble on the Pan: Spread the mixture in a single layer on the sheet pan. Top with mozzarella and Parmesan cheese.

Bake: Bake for 25–30 minutes, or until the chicken is cooked through (internal temperature 165°F) and the cheese is golden.

Optional Broil: For a crispier top, broil for the last 2–3 minutes.

Garnish and Serve: Remove from oven, garnish with fresh parsley and lemon wedges if desired. Serve warm.
