Skillet Tuscan Chicken is a rich, creamy dish made with seared chicken breasts, garlic, sun-dried tomatoes, fresh spinach, Parmesan cheese, and a velvety herb-infused cream sauce, perfect for a comforting and flavorful meal.
Ingredients
4 boneless, skinless chicken breasts (about 1.5 lbs)
4 cloves fresh garlic, minced
1 cup heavy cream
1/2 cup sun-dried tomatoes, packed in oil, chopped
2 cups fresh spinach
1/2 cup grated Parmesan cheese
1/2 cup low-sodium chicken broth
2 tsp Italian seasoning
2 tbsp olive oil
Salt and pepper to taste
Instructions
Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper. Cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet.
In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
Pour in heavy cream and chicken broth while scraping up browned bits from the pan. Stir continuously for 2-3 minutes until thickened.
Stir in fresh spinach and grated Parmesan cheese until melted and creamy.
Return the seared chicken to the skillet, spooning sauce over each piece. Simmer for another 5 minutes.
