Description

Slow Cooker Beef Bourguignon Recipe features tender beef slow-cooked in red wine, beef broth, carrots, onions, mushrooms, and herbs, creating a rich, savory French-inspired stew that’s comforting, flavorful, and perfect for cozy family dinners.


Ingredients

1 kg beef chuck, cut into large cubes

2 tablespoons olive oil

3 carrots, sliced

1 onion, diced

3 cloves garlic, minced

2 tablespoons tomato paste

2 cups red wine

2 cups beef broth

1 teaspoon dried thyme

1 bay leaf

200g mushrooms, halved

Salt and pepper to taste

Fresh parsley for garnish


Instructions

Heat olive oil in a skillet over medium-high heat. Sear the beef in batches until browned on all sides. Transfer to slow cooker.

In the same skillet, sauté onions, garlic, and carrots for 3-4 minutes. Add tomato paste and cook for 1 minute. Transfer to slow cooker.

Pour in red wine and beef broth. Add thyme, bay leaf, salt, and pepper. Stir gently to combine.

Cover and cook on low for 8 hours or high for 4-5 hours until beef is tender.

In the last hour of cooking, add the mushrooms.

Discard bay leaf, garnish with chopped parsley, and serve hot with mashed potatoes or crusty bread.
