Ingredients
1 pound boneless, skinless chicken breasts
2 cups dry penne pasta
1 can (10.5 ounces) cream of chicken soup
1 cup chicken broth
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup diced tomatoes, drained if very juicy
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
Salt and pepper, to taste
Chopped fresh parsley, for garnish
Instructions
Place the chicken breasts at the bottom of the slow cooker. Season with salt, pepper, garlic powder, and Italian seasoning.
In a bowl, whisk the cream of chicken soup and chicken broth until smooth. Pour this mixture evenly over the chicken.
Add the diced tomatoes and dry penne pasta on top. Stir gently to combine, ensuring the pasta is mostly submerged in the liquid.
Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the chicken is cooked through and the pasta is tender.
Remove the chicken to a cutting board and shred it using two forks. Return the shredded chicken to the slow cooker and stir to combine.
Add the shredded cheddar and mozzarella cheese. Stir until the cheese is fully melted and the sauce is creamy. Taste and adjust seasoning if needed.
Serve hot, garnished with chopped fresh parsley.
