Description

Enjoy a delicious Slow Cooker Chicken Burrito Bowl made with tender shredded chicken, black beans, sweet corn, diced tomatoes, and zesty salsa. Easy to prepare, packed with flavor, and perfect for a comforting weeknight meal or meal prep.


Ingredients

2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (15 oz) diced tomatoes with green chilies

1 cup salsa

1 packet taco seasoning

1/2 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper to taste

1 cup shredded cheddar or Mexican cheese blend (optional)

Cooked rice, for serving

Optional toppings: avocado, sour cream, chopped cilantro, lime wedges


Instructions

Place chicken breasts in the bottom of the slow cooker.

Add black beans, corn, diced tomatoes, salsa, taco seasoning, cumin, chili powder, salt, and pepper.

Stir slightly to coat the chicken with the mixture.

Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until chicken is cooked through and tender.

Shred the chicken directly in the slow cooker and mix well into the sauce.

Serve over cooked rice and top with cheese and any desired toppings.
