Description

Slow Cooker Chicken Stew is a hearty, comforting dish featuring tender chicken thighs, carrots, potatoes, celery, onions, garlic, and aromatic herbs simmered in a rich, flavorful chicken broth, perfect for cozy family meals.


Ingredients

1.5 lbs boneless, skinless chicken thighs

3 carrots, sliced

3 potatoes, diced

2 celery stalks, chopped

1 onion, chopped

3 cloves garlic, minced

1 tsp dried thyme

1 tsp dried rosemary

1/2 tsp paprika

Salt and pepper to taste

3 cups chicken broth

2 tbsp tomato paste

2 tbsp olive oil

2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)

Fresh parsley for garnish


Instructions

Heat olive oil in a skillet and sear chicken thighs for 2-3 minutes on each side until lightly browned.

Transfer chicken to the slow cooker.

Add carrots, potatoes, celery, onion, and garlic to the slow cooker.

Stir in tomato paste, thyme, rosemary, paprika, salt, and pepper.

Pour in the chicken broth and mix everything well.

Cover and cook on low for 6-7 hours or on high for 3-4 hours.

If desired, stir in cornstarch slurry 30 minutes before serving to thicken the stew.

Shred or chop chicken into bite-sized pieces and return to the stew.

Stir, garnish with fresh parsley, and serve warm.
