Ingredients
1 bag (32 oz.) frozen diced potatoes
1 (10.5 ounce) can condensed cream of celery soup
1 small onion, finely chopped
2 cups shredded Cheddar cheese, divided
1 cup sour cream
2 tablespoons unsalted butter
1 teaspoon minced garlic
1 teaspoon salt
½ teaspoon ground black pepper
½ cup kettle-cooked potato chips, crushed
Instructions
In a large mixing bowl, combine frozen potatoes, cream of celery soup, chopped onion, 1½ cups cheddar cheese, sour cream, butter, garlic, salt, and pepper.
Transfer mixture to a greased slow cooker and spread evenly.
Sprinkle remaining ½ cup cheddar cheese over the top.
Cover and cook on HIGH for 2½-3 hours or until potatoes are tender.
During last 15 minutes of cooking, sprinkle crushed potato chips evenly over the top.
Let stand for 10 minutes with lid slightly vented before serving.
