Description

Slow Cooker Garlic Herb Pot Roast Recipe features a tender 3 lb chuck roast slow-cooked with garlic, fresh thyme, rosemary, carrots, Yukon Gold potatoes, onions, and savory beef broth for a flavorful, melt-in-your-mouth family favorite.


Ingredients

For the roast and vegetables:

  • 5 garlic cloves (minced)
  • 1 chuck roast (3 lb, room temperature)
  • 1 1/2 tbsp olive oil
  • salt
  • 1 tbsp fresh thyme
  • ground black pepper
  • 2 tsp Worcestershire sauce
  • 1 tbsp fresh rosemary
  • 1 yellow onion (diced)
  • 5 medium carrots (1 lb, cut into chunks)
  • 2 1/2 lb small Yukon Gold potatoes (halved)
  • 1 1/4 cups beef broth
  • 2 tbsp fresh parsley (for garnish)

For the gravy (optional):

  • 3 tbsp beef broth
  • 2 1/2 tbsp cornstarch (optional but recommended)


Instructions

Heat olive oil in a large skillet over medium-high heat. Season the roast with Prime Time blend, salt, and pepper.

Sear the roast on all sides until browned.

Place the roast in a slow cooker. Add garlic powder, rosemary, thyme, beef broth, carrots, potatoes, and onion.

Cook on low for 8 hours or until fork-tender.

Serve with the vegetables and spoon some of the cooking juices over the meat.
